By far, one of those most annoying parts of being an adult, being single and living alone is making dinner. Are you REALLY going to whip up a big ass meal, dirtying every pot and dish you have, working up a sweat in the process, so that one hour later you can scarf down whatever it is right out of the skillet in less than 20 minutes, only to deal with 3 weeks worth of leftovers and an hour of lonely cleanup?
I’m gonna let you in on a little secret that will have you eating all the culinary delights that your married friends are indulging in, properly portioned for one, with zero cleanup.
Microwavable dinners for one.
I know, you’re all like “But Meredith, I lived off Mr. Noodles when I was college! I can’t do it again!”
This ain’t no Mr. Noodles, fool. I have crafted the top 3 microwavable dinners for singles that will have you feeling full, satisfied, and indulging in culinary pleasures from around the world.
Let’s do this.
3) Michelina’s Traditional Recipes Fettuccine Alfredo with Chicken and Broccoli – You gotta have a pasta option. When it comes to microwave dinners, pasta is always top of list. There’s something about a good pasta in cream sauce that is just so easy to freeze, and defrost without losing any texture or taste. You can also feel good about yourself with this option, because you got your chopped up chicked reppin’ protein, and your broccoli florets reppin’ the veggie side of things. Wash it down with a glass of milk and BOOM – all 4 food groups. Also, don’t discount the fanciness of the name either. “Michelinas”? Woah – did I just do dinner in Italy?

2) Amy’s Indian Vegetable Korma – Want to add a little spice to things? Craving curry but don’t want to pay a fortune for takeout? Welcome to Amy’s world. I don’t know who Amy is, but she’s a part of my kitchen at least once a week. This meal is great for a little variety. Instead of one large amount of one item, you get to sample several difference “side dishes” if you will. You got vegetable in a curry sauce (bonus – they’re organic too! Just like your pretentious friend Maggie eats who won’t shut up about GMO’s all the time!), Then you got some yummy and filling rice up in there, plus a dal with spiced lentils and beans! If you close your eyes, and just smell it in the microwave you almost believe that you’ve slaved over a stove all day with spices and sauces, doing taste tests along the way with a wooden spoon propped up into a loved ones mouth!

1) Hungry Man Selects Fried Chicken – This is the king of microwavable meals. First off – there’s plenty of food. Anything called “Hungry Man” is gonna have more than enough of a serving size to make sure you’re not chomping on stale chips later that night. This meal is the king of comfort foods. Fried chicken and mashed potatoes? Just like mom used to make? Sign me up! Bonus – there’s corn as well! It’s just like Sunday dinner with the family, except you don’t have to hear your dad tell you how disappointed he is in you! The best part is that Hungry Man doesn’t neglect the dessert part of a meal either. This thing comes with a warm brownie to satisfy that sweet tooth in you.
